, owner/creator of Cocoa & Grapes and main tour guide, was born and raised in Vancouver, Canada. Brent has lived and worked in Canada, India, the United Kingdom and now France. Since first discovering Carcassonne in 2005, Brent has been developing a passion and curiosity for the many stories of Carcassonne and for the abundant and sumptuous wines of the Languedoc-Roussillon. Brent has attained an Advanced Wine Certificate from the Wine and Spirit Educational Trust (WSET) in London, England, and has been awarded the highly regarded Sud du France Master Certificate from the Languedoc Roussillon Region (Sud de France), the Wine Scholar Guild and lead instructor Matthew Stubbs, Master of Wine and director of Vinécole.
Brent has always been a connoisseur of all things chocolate. After attending chocolate making classes and chocolate tasting tours in London, England, his former hometown before Carcassonne, he decided to merge three of his favourite things into one exciting new venture and VOILÀ, the birth of Cocoa & Grapes.
Brent's raison d'être for creating these tours was for clients to experience something very special, something most tourists do not experience: a glimpse into what makes living in Carcassonne and our surrounding region so delightful and enriching.
Bryan Teixeira PhD
serves as a consultant and advisor to Cocoa & Grapes. Dr Teixeira has a background in cultural psychology and is a management consultant. He also has a keen interest in the historical societies and cultures of southern France.
